With a culinary adventure that began at the prestigious Culinary Institute of Canada in Prince Edward Island, Tracy has traveled far and wide to hone his skills and craft unforgettable dining experiences. Tracy is not just a talented chef; he’s a natural leader who believes in the power of teamwork and creativity in the kitchen. His experience as Chef de Cuisine at Coltivare in Ithaca showcased his flair for developing farm-to-table menus that delight the senses. Prior to that, he served as Executive Chef at Colletta Italian Food & Wine, where he led a vibrant team in a fast-paced environment, crafting delicious dishes with a touch of Italian flair.

Manny is a vibrant and energetic chef known for his fun-loving personality and deep passion for soccer, particularly his unwavering support for Real Madrid. With a bachelor's degree in Gastronomy Services and over 13 years of experience, he has explored a rich tapestry of culinary traditions throughout his career.
